Description

This bright and zippy sauce will jazz up buddha bowls, salads, pasta and pizza! Easy to make, this sauce is ready in 5 minutes or less.


Ingredients

Scale
  • 1 bunch parsley
  • 1/2 cup cashews (soaked)
  • 1 lemon, juiced
  • 2 tbsp extra virgin olive oil
  • 1 clove garlic, minced
  • 1/2 tsp horse radish
  • 2 tsp dried dill
  • 1/2 tsp sea salt, or to taste
  • 1/2 cup water, more as needed to thin sauce

Instructions

  1. Place all ingredients in a high speed blender and blend until smooth.
  2. Taste and adjust seasonings as desired, add more water if the sauce is too thick.

Notes

  1. If you forgot to soak your cashews, use the quick soak method: pour boiling water over cashews and allow to soak for 20 minutes. Drain cashews and use as instructed.
  2. Sauce texture can vary, add more water (a tablespoon at a time) to adjust the consistency as desired.
