Description
This bright and zippy sauce will jazz up buddha bowls, salads, pasta and pizza! Easy to make, this sauce is ready in 5 minutes or less.
Ingredients

- 1 bunch parsley
- 1/2 cup cashews (soaked)
- 1 lemon, juiced
- 2 tbsp extra virgin olive oil
- 1 clove garlic, minced
- 1/2 tsp horse radish
- 2 tsp dried dill
- 1/2 tsp sea salt, or to taste
- 1/2 cup water, more as needed to thin sauce
Instructions
- Place all ingredients in a high speed blender and blend until smooth.
- Taste and adjust seasonings as desired, add more water if the sauce is too thick.
Notes
- If you forgot to soak your cashews, use the quick soak method: pour boiling water over cashews and allow to soak for 20 minutes. Drain cashews and use as instructed.
- Sauce texture can vary, add more water (a tablespoon at a time) to adjust the consistency as desired.
