Don’t let those carrot tops go to waste! Try this quick and easy pesto recipe – it makes a great topping for salads, pizza, wraps and more!
Ingredients

- 5 cups carrot tops
- 1 cup parsley
- 2 tsp dried oregano
- 1/4 cup nutritional yeast
- 1 tsp sea salt
- 1 garlic clove, roughly chopped
- 1 lemon, juiced
- 1/3 cup water (more as needed to achieve desired consistency)
- 1/4 cup extra virgin olive oil
- 1 tbsp apple cider vinegar
- 1/4 cup cashews (optional)
Instructions
- Add all ingredients to a high speed blender or food processor, blend until well combined and smooth, stopping to scrape down the sides as needed.
- Taste and adjust seasonings as needed (more salt, oregano, etc)
Notes
To make this nut free, use sunflower seeds in place of the cashews or omit the cashews completely.
